We are incredibly grateful to The Pebble Trust for supporting us financially. Their support has paid for us to conduct workshops with Community Land Outer Hebrides, Scottish Islands Federation which led to publishing case studies on pressing issues linked to sustainable local food and climate change, and also upgrade our stuffing equipment.
We have done three case studies: Supply Chains for Local Charcuterie (utilising crofters meats); Cutting Plastic use for Small Producers; and Pest or Plate Filler (using wild meats).
We have also held a wide range of meetings with crofters, land trusts, HIE, Comhairle nan Eilean Siar, The Crofting Commission and many others to look at supporting crofting to promote local food use.
These discussions have led to more questions than answers and may form the basis of a feasibility study into community level processing, storage and production facilities to support wider level local food use.
For full copies of the case studies please email: brian@hebrideancharcuterie.co.uk as only the front pages of each case study appear here and all are two or three pages long.
