This special salami was created in homage to crofters raising sheep to provide meat for their families.
Although France and Italy are famous for their charcuterie, Islanders also had a tradition of preserving meat, and when we started making salami friends told us tales of their granny salting and air-drying sheep legs, with chunks of the meat added to nourishing and warming winter soups.

This salami features a Baharat (spice) mix, and is used in Middle Eastern cooking, this blend of spices is aromatic and the slightly sweet notes work perfectly with the mutton.
